Ingredients

    8 ounce(s) green beans, chopped
    2 tablespoon(s) water
    2 teaspoon(s) olive oil
    1 small onion, chopped
    1 pound(s) spicy Italian sausage, dr max     1/2 cup(s) chopped roasted red peppers
    2 clove(s) garlic, pressed
    1/4 teaspoon(s) salt
    1 (16-ounce) tube cooked polenta, sliced into 1/4-inch rounds
    1/3 cup(s) lower-sodium chicken broth
    1/2 cup(s) grated Parmesan

Directions

    Preheat oven to 425 dr max degrees F. Microwave green beans and water in covered bowl on high 2 minutes or until bright green; drain.
    Meanwhile, heat olive oil in 12-inch skillet on medium-high. Add onion and Italian sausage; cook 6 minutes, stirring and breaking up sausage. Stir in beans, chopped roasted red peppers, garlic, and salt. Cook 2 minutes.
    Layer cooked polenta and sausage mixture in rows in 8-inch-square baking dish. Top with chicken broth and grated Parmesan. Bake 15 minutes or until hot. Top with chopped parsley.
